Orange Wednesday: Carrot Spicy Salad

This healthy, simple and delicious carrot salad comes from Farida’s Azerbaijani Cookbook. Oriental cuisine has lots of wonderful recipes and this is one of them. It's great for any kind of diet as there's neither mayonnaise nor any other fat sauce used.

And regarding carrots - this really tasty root vegetable has been found to reduce the risk of cancer. Isn't it a good enough reason to eat more carrots?

Carrot Spicy Salad

Ingredients

4 medium carrots, peeled
1 tablespoon olive oil
1 cup plain yogurt
3 gloves garlic, peeled and crushed
1 teaspoon golden raisins (optional)
salt, to taste
ground black pepper, to taste
parsley sprigs and black olives, to garnish

1. Grate the carrots using the coarse side of a box grater.

2. In a medium non-stick frying pan, heat the oil over medium heat. Add the carrots and fry, stirring frequently, for about 7-10 minutes, or until cooked. Do not overcook: they should be soft but not mushy. I usually prefer them a little undercooked, for a fresher taste. Remove from heat and allow to cool.

3. In a mixing bowl, combine yogurt and garlic, and mix well. Add carrots, raisins. Season with salt and pepper to taste. Mix well.

4. Serve chilled, garnished with black olives and parsley.

Hi, I'm stopping by from SITS! I just wanted to share a bit of comment love.

I'm sorry, I have to say that I don't think the salad looks that appetizing but I do think I would LOVE the orange smoothie. It sounds delicious so I'm going to keep that recipe! I remember when my girls were young, they really loved baby food with carrots in it. One day I noticed how very yellowish-orange my daughter's skin was. She actually looked almost looked jaundiced. I grew concerned and took her to the doctor where I learned that it was not jaundice but was due to the carrots, sweet potatoes, and other orange veggies and fruits she had been eating. Apparently, the beta-carotene found in these gets deposited into the skin of young children and then their skin appears orange! It is not dangerous, they just have an orange glow to them for a while. Whew!

Hi Teresa, thanks for your comment! The carrot salad is pretty special and I understand that it's not for everyone.

Well, that salad looks yummy to me! And it could be hot too. Thanks for the ideas. I try to get lots of 'color' in my diet. The vegetables get sneaked in just fine -- it's getting the fruits in my daily diet that are proving a challenge. I have cancer and only a fourth of a kidney so I don't eat much - no appetite. But my husband does, and I do love to cook and bake (and living in the country you can't grab something or go to a restaurant) so I have a huge recipe file...stopping by from SITS. Won't you please come over and visit me too.
